Caesar Duck Salad

A surprising twist on the classic: romaine lettuce, Caesar dressing, smoked duck breast, and crispy Grana Padano fritters.

Ingredients

Caesar dressing
Romaine lettuce
pepper from the mill
2units.itemsEgg whites (M)
smoked duck breast
150gGrana Padano grated

Preparation

  1. Mix the egg whites with the grated cheese.
  2. Form into balls.
  3. Let them firm up in the refrigerator for about 30 minutes.
  4. Fry the cheese balls in oil until crispy and hot.
  5. Grind some pepper from the mill over the cheese balls.
  6. Place the cheese balls on a leaf of romaine lettuce.
  7. Add one or two slices of smoked duck breast.
  8. Garnish with the Caesar dressing.
