Preparation
- Peel the banana and sprinkle with a little lemon juice.
- Caramelize the sugar in a dry pan.
- Add the olive oil and pandan liqueur.
- Place the banana in the caramel and caramelize briefly.
- Mix the egg yolks with the sugar.
- Add the cream, milk, and agar+ and heat the mixture to 80˚C.
- Add the yuzu juice, cool down, and fill a siphon with the crème brûlée.
- Charge with 2 cartridges and chill.
- Place the caramelized banana on a plate.
- Pipe the yuzu crème brûlée onto the banana.
- Sprinkle a little cane sugar over the crème brûlée and caramelize with a blowtorch.
