Cheesecake with Mango

The creamy cheesecake with the tropical sweetness of mango is a delicious dessert that will enchant the taste buds.This recipe is for approximately 6 servings.

Ingredients

Breton cookies
70gButter

300gFresh cheese
150gCoconut cream
75gCaster sugar
100gEggs

400mlFruit purée 100% Mango
2units.itemsGelatin sheets DE 180

Preparation

  1. Roughly break the cookies in the mixer. Add the butter.
  2. Press the mixture into a rectangular springform* and chill.
  3. Preheat the oven to 180°C.

  1. Separate the egg whites and yolks.
  2. Whisk together the cream cheese, coconut cream, sugar, and egg yolk.
  3. Whip the egg whites until stiff and fold into the previous mixture.
  4. Pour the mixture onto the cookie base in the rectangular baking tin.
  5. Bake for about 40 minutes at 180°C.
  6. Remove the cheesecake from the tin and let it cool before preparing the glaze.

  1. Hydrate the gelatin in cold water.
  2. Add a little mango purée preheated in the microwave.
  3. Add the rest of the mango purée and mix carefully.
  4. Surround the cheesecake with rhodoid tape, letting it stick out about 1 cm, and pour the mango purée over it.
  5. Refrigerate until the mango purée sets.
  6. Cut the cheesecake into 6 portions.
