
Dim sum under a rice cracker

Oil
Rice flour
Coriander
Water
chicken gyozas
Preparation
- Make a rice batter by mixing rice flour with water (ratio is 1 part flour to 9 parts water).
- Mix well and season with a little salt.
- Transfer this batter to a squeeze bottle.
- Let the gyozas thaw.
- Heat a little oil in a frying pan.
- Place the gyozas flat side down in the oil and squirt a little of the batter in between, until the pan is filled (thin layer).
- Put the lid on the pan and lower the heat.
- Let the gyozas warm up and the rice cracker crisp up.
- Flip everything onto a plate. Garnish with a sauce of your choice and fresh coriander.
