This recipe is the perfect base. Add your desired flavors to it. Ideal for quick service!Tip: the base is perfect to prepare in advance and store vacuum-sealed or frozen.

20gSmoked garlic
80gButter
150mlWhite wine
500gQimic base
500mlMilk
Preparation
- Finely chop the shallots and garlic.
- Sauté the shallots and garlic in a pan with butter.
- Add the wine and reduce until it has a syrupy texture.
- Add the Qimic and milk, and blend using a blender or hand blender until you have a smooth sauce.
- Heat the base sauce.
- Add 300 grams of grated cheese of your choice per serving.
- Let it melt until the cheese is nicely incorporated into the base sauce.
- Season with freshly ground pepper and parsley. Voilà!
