Dipping from a base sauce

This recipe is the perfect base. Add your desired flavors to it. Ideal for quick service!

Tip: the base is perfect to prepare in advance and store vacuum-sealed or frozen.

Ingredients

Basic recipe

80gShallots
20gSmoked garlic
80gButter
150mlWhite wine
500gQimic base
500mlMilk

Preparation

  1. Finely chop the shallots and garlic.
  2. Sauté the shallots and garlic in a pan with butter.
  3. Add the wine and reduce until it has a syrupy texture.
  4. Add the Qimic and milk, and blend using a blender or hand blender until you have a smooth sauce.

  1. Heat the base sauce.
  2. Add 300 grams of grated cheese of your choice per serving.
  3. Let it melt until the cheese is nicely incorporated into the base sauce.
  4. Season with freshly ground pepper and parsley. Voilà!
