Pheasant roulade with risotto, mushroom base and cèpes foam

Preparation
- Make the farce from chicken breast, egg white, cream, truffle tapenade, truffle oil and salt.
- Slice the pheasant fillets open through the middle.
- Lay 3 sheets of butcher's foil on the work surface.
- Place the fillets on the foil.
- Pipe the farce in a line over the fillets.
- Fold the fillets over the farce and roll up tightly.
- Sauté the onion and garlic.
- Fry the mushrooms and add the oregano.
- Deglaze with white wine.
- Add the mushroom stock and cream.
- Let it reduce.
- Heat the risotto while stirring.
- Add the mushroom base.
- Add the Parmesan cheese.
- Season with pepper and salt.
- Infuse madeira, port, chicken stock, and dried cèpes.
- Add the cream and reduce to 400 ml.
- Add Pro Espuma warm.
- Put the mixture in a siphon.
- Spoon the risotto in the center of the plate.
- Place the pheasant roulade on the risotto.
- Finish the dish with fried maitake, fried king bolete, and cèpes foam.
