Cooked mini beets

Small beets, big on flavor.

Ingredients

Beet juice
mini beets
Shallots

Preparation

  1. Cook mini beets in water with a little salt. Use a small knife to remove the skins from the beets.
  2. Sauté a few shallots in butter, add the cleaned beets. Deglaze with a little beet juice, let it reduce slightly, and serve immediately.
