Stewed pear with a pear gel

Two pear textures in a delicious dessert.

Ingredients

50gSugar
5gAgar
vanilla pod
1Doyenné du Comice
300mlJagertee
optional pear liqueur
750mlWater
Lemon juice
500gpear purée (Boiron)

Preparation

  1. Cut a fresh Doyenné du Comice into small cubes. Place them in lemon juice to prevent discoloration.
  2. Make a syrup from the water, Jagertee, sugar, and the seeds from a vanilla pod. Poach the pear cubes in this and let them drain well.
  3. Make the gel by thinning the pear purée with a little water so it becomes slightly thinner (optionally season with a bit of pear liqueur).
  4. Add sugar and agar and bring to a boil.
  5. Pour out, let cool, and then blend in a food processor until smooth and pipeable.
