Glazing is back.Ingredients
225gWhole milk
225gGlucose syrup
1Neutral oil
6Gelatin sheets
300glime chocolate
Preparation
- Boil the milk with the glucose. Dissolve the soaked gelatin in it.
- Pour this over the chocolate and mix well. Add the oil.
- Sieve twice (once through a sieve and once through a fine mesh strainer).
- Use the mixture at 35°C. Pour this over well-frozen dessert creations.
