
Herring with cucumber and herring caviar
The Hollandse Nieuwe is back Herring, presented in just a slightly different way.Ingredients
herring
Cucumber
Sushi vinegar
Crème fraîche
herring caviar
Preparation
- Cut the herring into brunoise.
- Use the Japanese vegetable slicer to cut thin slices of cucumber.
- Place the cucumber slices in the sushi SU for about a minute. Then cut them to the desired size.
- Spoon the herring brunoise onto the cucumber slices and roll them up tightly.
- Mix a teaspoon of herring caviar with a tablespoon of crème fraîche and season with a little salt. Spoon onto a plate and place the three cucumber and herring rolls on top.
- Serve with purple radish and watercress.
