
Irish stew
A typical Irish stew made with lamb neck.Ingredients
1kgboneless lamb neck
750gpurple carrots
750gFloury potatoes
1units.itemslarge onion
2units.itemsGarlic cloves
3units.itemscelery stalks
fresh herbs (parsley and chervil)
bay leaf and peppercorns
lamb stock
bottle of Guinness
Preparation
- Cut the lamb neck into even pieces.
- Sauté the sliced onion and garlic and add the lamb.
- Brown well and season with salt afterwards.
- Add 1 liter of lamb stock, a few crushed peppercorns, and a few bay leaves.
- Braise over low heat for about 10 minutes.
- Peel the potatoes and carrots and clean the celery.
- Cut into even pieces.
- Add to the pan and let simmer gently for another 20 minutes.
- Add a splash of Guinness during the last 5 minutes.
