Peach jam

Making jam is an ideal way to preserve your summer fruit.

Ingredients

1kgPeaches
1kggelling sugar
1Lemon

Preparation

  1. Score the peaches crosswise and dip them in boiling water for 8 seconds.
  2. Peel the peaches, cut them in half, and remove the pit.
  3. Cut the flesh into coarse pieces.
  4. Heat the peach together with the gelling sugar and the juice of one lemon to 105°C. If there is foam on the jam, skim it off.
  5. Fill the jars with jam.
