Tartare on tortilla with guacamole and salsa verde

A Joviander tartare of veal mouse on a tortilla with fresh guacamole and salsa verde.

Preparation

  1. Cut a nice, even tartare from the veal eye of round and season with the ingredients.

  1. Cut the avocados into coarse pieces.
  2. Finely chop the coriander, red chili, and parsley.
  3. Finely dice the onion.
  4. Mix this into a coarse mass.
  5. Peel the skin off the tomatoes and cut into cubes.
  6. Grate some lime zest with a fine grater and squeeze out the juice.
  7. Add this to the guacamole and season with some salt and pepper.

  1. Peel the avocado and remove the pit.
  2. Cut into coarse pieces and blend with the other ingredients until smooth.
  3. Season with salt.

  1. Place a large lettuce leaf on a tortilla and put the tartare on top.
  2. Finish with the guacamole and salsa verde.
