Preparation
- Cut a nice, even tartare from the veal eye of round and season with the ingredients.
- Cut the avocados into coarse pieces.
- Finely chop the coriander, red chili, and parsley.
- Finely dice the onion.
- Mix this into a coarse mass.
- Peel the skin off the tomatoes and cut into cubes.
- Grate some lime zest with a fine grater and squeeze out the juice.
- Add this to the guacamole and season with some salt and pepper.
- Peel the avocado and remove the pit.
- Cut into coarse pieces and blend with the other ingredients until smooth.
- Season with salt.
- Place a large lettuce leaf on a tortilla and put the tartare on top.
- Finish with the guacamole and salsa verde.
