
Kik curry
A flavorful curry based on chickpeas, cooked in a creamy coconut milk sauce.Recipe is for approximately 10 people.Ingredients
100mlOlive oil
750gUncooked basmati rice
1lCoconut milk
100gMild curry paste
1kgCauliflower
60gCoriander
750gBonduelle mixed bell pepper strips
775gBonduelle green chickpeas
Preparation
- Cook the rice according to the instructions on the package.
- Heat the oil in a large frying pan.
- Add the curry paste and fry for 1 minute.
- Pour the coconut milk into the pan and bring to a boil. Lower the heat.
- Cut the cauliflower and add the florets, heat for 3 minutes.
- Then add the mixed bell pepper strips and heat for another 2 minutes.
- Rinse the chickpeas and drain well. Stir the chickpeas into the curry and heat for another 3-4 minutes.
- Spoon the rice into 4 deep plates or bowls. Divide the curry over them.
- Roughly chop the coriander and sprinkle over the dish.
