Kik curry

A flavorful curry based on chickpeas, cooked in a creamy coconut milk sauce.Recipe is for approximately 10 people.

Ingredients

100mlOlive oil
750gUncooked basmati rice
1lCoconut milk
100gMild curry paste
1kgCauliflower
60gCoriander
750gBonduelle mixed bell pepper strips
775gBonduelle green chickpeas

Preparation

  1. Cook the rice according to the instructions on the package.
  2. Heat the oil in a large frying pan.
  3. Add the curry paste and fry for 1 minute.
  4. Pour the coconut milk into the pan and bring to a boil. Lower the heat.
  5. Cut the cauliflower and add the florets, heat for 3 minutes.
  6. Then add the mixed bell pepper strips and heat for another 2 minutes.
  7. Rinse the chickpeas and drain well. Stir the chickpeas into the curry and heat for another 3-4 minutes.
  8. Spoon the rice into 4 deep plates or bowls. Divide the curry over them.
  9. Roughly chop the coriander and sprinkle over the dish.
