Kletskop of black quinoa

Delicious in dessert, but also in a starter with albacore tuna tartare. In that case, replace part of the sugar with polydextrose (25245990).

Ingredients

90gFlour
150gMelted butter
45gblack quinoa cooked
120gorange juice
240gPowdered sugar

Preparation

  1. Mix the orange juice, sugar, and flour into a smooth mixture. Add the pre-cooked black quinoa and finally the warm butter.
  2. Let the batter rest for 3 hours in a cool place.
  3. Use a spoon to make circles of the batter and place them on a silicone mat or parchment paper and bake at 175°C until evenly golden brown.
  4. Roll the quinoa tuiles around a PVC pipe or the handle of a whisk so they cool further in the right shape.
