Crispy butterfly of BrewDog Punk IPA

This crispy beer butterfly is delicious on a fresh spring dish featuring, among other things, mussels, green peas, broad beans, and watercress.

We made this butterfly from BrewDog Punk IPA: a transatlantic fusion IPA with a light golden color and aromas of tropical fruits and caramel. The palate is stimulated by the spicy New Zealand hops, balanced with biscuity malt. A fresh ode to classic India Pale Ales with a modern twist.

Ingredients

tempura batter mix
silicone butterfly mold
BrewDog Punk IPA

Preparation

  1. Sprinkle the tempura flour into a bowl.
  2. Pour in the beer until a nice batter forms. Do not make the batter too thin.
  3. First make the tenkasu (crispy tempura balls). For this, put the batter in a squeeze bottle and drop it into a little hot oil at 180°C, and for the crispy butterfly, squeeze some of the batter into a stencil and smooth it with a palette knife. Then place the stencil in oil at 180°C.
