Ingredients: 3 Garlic cloves; 40 g Peanuts; 140 g Onion; 60 g Jerusalem artichoke; 25 g codium; small piece of red chili; 0.25 bunch of lovage; 120 g celeriac with leaves; 60 g Parsnip; 20 ml Grape seed oil; 1 g Garam masala

60gJerusalem artichoke

25gcodium

small piece of red chili

0.25bunch of lovage

120gceleriac with leaves

60gParsnip

20mlGrape seed oil

1gGaram masala

Preparation

Caramelize and smoke the onion.
Blend a cream from celeriac and parsnip.
Roast the peanuts.
Blend everything smooth with a broth made from celery leaves, chili pepper, onion trimmings, Jerusalem artichoke, and garlic.
Blend an oil from grapeseed oil and lovage.
