Liefmans tarte tatin with tomato

Tarte tatin with tomato and Liefmans Fruitesse. Finish with a sprig of rosemary.

Ingredients

25units.centiliterLiefmans Fruitesse
2coeur de boeuf tomatoes
1Puff pastry
1sprig of rosemary
100gSugar

Preparation

  1. Preheat the oven to 150°C and meanwhile soak the sugar in the Liefmans Fruitesse. After a few minutes, drain the Liefmans to obtain pink sugar.
  2. Rub a roasting pan with olive oil and spread the Liefmans sugar over it.
  3. Cover the entire bottom with a double layer of thinly sliced tomato. Sprinkle the rosemary over it.
  4. Place the roasting pan in the oven for 10 minutes and drain off any excess juice if necessary.
  5. Increase the temperature to 200°C and lay the dough over the tomato, pressing it well along the sides and pricking a few holes in the dough.
  6. Return the whole to the oven for 25 min. Immediately invert the tarte tatin onto a plate and serve with a nice piece of meat.
