Macaron blueberry

This macaron bite with blueberry is airy, sweet, and has a touch of freshness.

Ingredients

10gPurple food coloring
500gmacaron mix
90gwater (40-45°C)

140gwater (35°C)
700gwhipped cream
140gtiramisu base

Blueberries
Cress
dried blueberry

Preparation

  1. Put all ingredients in a stand mixer and mix for 5 minutes on the highest setting with a paddle attachment until you have a smooth batter.
  2. Pipe the batter onto silicone paper in strips of 10 centimeters.
  3. Let the batter dry for 10 minutes.
  4. Bake the macarons in the oven at 130⁰C for 20–22 minutes, with the door slightly open.
