Preparation
- Mix half of the milk with the rest of the ingredients and stir until smooth.
- Add the remaining milk until a batter forms.
- Portion this onto a greased poffertjes pan, sprinkle some crispy mango on top, and bake the poffertjes.
- Cut the mango into small cubes.
- Cook the rest of the ingredients together, except for the potato starch.
- Pour this warm over the diced mango and let it cool in it.
- Lightly thicken the compote with potato starch.
- Mix all the ingredients well together with a whisk.
- Whip the mixture until light and airy.
- Place the warm poffertjes on a plate.
- Spoon compote next to the poffertjes.
- Spoon some of the foam onto the poffertjes and caramelize with a blowtorch.
- Tip: serve with a few scoops of mango ice cream.
