Preparation
- Finely chop a shallot and a clove of garlic. Sauté in oil with 1 bruised stalk of lemongrass and a slice of ginger. Add 10 mussels and fry. Place the lid on the pan until the mussels open.
- Remove the mussels, add 1 liter of mussel stock. Let it reduce gently and strain the soup. Add a little coconut cream.
- Ladle the soup into a bowl, place a mussel on top, and garnish with fried glass noodles and coriander.
