Lime chocolate panna cotta

A refreshing spring panna cotta.

Ingredients

4Gelatin sheets
200glime chocolate
260gWhole milk
250gloosely whipped cream
fresh lime zest
40gMascarpone

Preparation

  1. Bring the milk to a boil and dissolve the soaked gelatin in it. Melt the lime chocolate in it.
  2. Add the mascarpone and mix in a little fresh lime zest.
  3. Let cool until 'hanging' and then mix in the semi-whipped cream.
  4. Pour into silicone molds and freeze, to make unmolding easier.
  5. Let thaw to serve.
