1sprig of dried oregano

70units.centiliterpoultry stock
36units.centiliterPassata
1banana shallot
1Garlic clove
1Greek olive oil
Preparation
- Pour a generous splash of Greek olive oil into a heavy-bottomed pan.
- Finely chop a shallot and garlic and sauté them in the oil until translucent. Add the manestra and briefly sauté, then deglaze with some poultry stock and part of the passata.
- Cook the manestra on low heat, stirring well. As the liquid is absorbed, add more. Repeat until the manestra is cooked. Season with salt and pepper.
- Garnish to taste with various grilled vegetables.
- Add some dried oregano for a true Greek finishing touch and place a nice piece of grilled halloumi on top.
