Tuna Rockefeller

Creamy tuna with garlic spinach, Hollandaise and brioche crumbs in a crispy cup: a luxurious twist on the classic Rockefeller.

Bites, finger food, amuse-bouches... call it what you will. One thing is certain: this is how you start dinner in style.

Ingredients

Fresh parsley
80gMango
Freshly ground pepper
80gGranny Smith apple
Caesar dressing
300gTuna

Fresh spinach
Olive oil
brioche bread
Hollandaise sauce
Crispy cups gold
Garlic
Pepper and salt (to taste)

Preparation

  1. Cut the Granny Smith apple and mango into small cubes.
  2. Mix the tuna with the apple and mango.
  3. Finely chop the parsley.
  4. Add the dressing, pepper, and parsley to taste and mix well.

  1. Briefly stir-fry the spinach in olive oil with finely chopped garlic.
  2. Divide the garlic spinach among the crispy cups.
  3. Spoon some tuna salad on top.
  4. Garnish with a dollop of Hollandaise sauce.
  5. Briefly place the cups in the oven at 160°C to warm.
  6. Meanwhile, toast some crumbled brioche bread in olive oil and season with pepper and salt.
  7. Remove the cups from the oven and lightly gratinate with a blowtorch.
  8. Finally, sprinkle with the crispy brioche crumbs.
