Fish fillet with vegetable pâté of bell pepper, tomato and feta

This recipe was presented during the Chef's Table at the sneak preview of HANOS Maastricht on July 19, 2022.

Ingredients

20gPowdered sugar
30gMelted butter
66gFlour
Salt
Squid ink
10gParmesan cheese
44gEgg white
silicone mold
vegetable pâté paprika, tomato and feta

Preparation

  1. Mix everything (except the vegetable pâté) into a batter.
  2. Spread out in a silicone mold and bake at 170˚C for about 10 minutes.
  3. Serve the vegetable pâté on top.
