The chanterelle, or girolles, has a very specific taste. The flavor is peppery and the mushroom emits an apricot scent. This mushroom has a deep yellow color, although white or orange-like variations sometimes appear. Chanterelles have the shape of a funnel. The mushrooms can be perfectly fried with other mushrooms and are delicious with a piece of steak or game. Furthermore, the chanterelle can also be used in ragout, pasta, or as an addition to toasted bread. Add the chanterelles to a dish at the last moment, as cooking them too long makes the mushroom tough.
