It is clear that Callebaut® cocoa butter is an important ingredient for every creative chocolate chef. It is pressed from a premium selection of fully roasted cocoa beans and is 100% pure with a neutral taste and color. The cocoa butter is ideal for creating color mixtures for spray gun applications and also for adjusting the fluidity of chocolate. Add between 1% and 8% cocoa butter to the total volume of your chocolate to make the chocolate a bit more fluid. This is ideal for thin to very thin shapes and layers, while simultaneously enhancing the shine and bite of the chocolate in molded and enrobed confectionery applications.
