The Echalongue is in every respect the perfect shallot. This shallot is very easy to peel and slice into rings. Thanks to better resistance, the Echalongue has a longer shelf life and is available all year round. The taste of this elongated, yet bulbous shallot is spicy, even a bit spicier than the taste of the banana shallot.
