Pecorino is a cheese with many varieties. The spicy salty Romano is dry and more suitable for grating and slicing, and for example, the Sardo is an artisanal pecorino from Sardinia that is perfect for a cheese platter. One thing pecorinos have in common, they are all made from sheep's milk and owe their name to it (pecora = sheep).
