The sole is perhaps the best-known and most sought-after flatfish. The fish is recognizable by its attractive oval shape and rounded head. It has a reddish-brown color, which serves as camouflage when it searches for food at night. During the day, the fish lies buried in the sand on the seabed. The sole can reach a length of up to 70 centimeters and a weight of up to 3 kilograms. Sole has firm flesh with a delicate, juicy flavor and is suitable for drying, steaming, frying, and grilling.
