Bourbon vanilla from Madagascar is high-quality vanilla, grown on the island of Réunion (formerly Bourbon) east of Madagascar. The vanilla pods crystallize over time, causing small, white crystals to appear on the pods. This results in a higher vanillin content and the pods release more aroma.
