Wild boar low & slow, served with celeriac & parsnip, Brussels sprouts, pasta shell filled with pointed cabbage and gratinated with ossekop cheese, accompanied by crispy spicy puff pastry.
These low & slow parts of the wild boar require a longer preparation at a lower temperature. This gives the meat a nice tender structure. We recommend brining the meat before cooking. The low and slow parts have reasonably the same weight, allowing you to easily cook multiple parts at the same time.
