200gpotato soup with truffle

Preparation

  1. Bring two liters of water to a boil and, while stirring, add the weighed soup powder.
  2. Let the soup simmer gently for 5 minutes.

  1. Clean the celery, cut it brunoise, and blanch it.
  2. Cut the brioche bread into nice cubes and fry them crispy in the clarified butter.

  1. Divide the brunoise of celery into the soup bowls and ladle the soup over it.
  2. Finish the soup with watercress and serve with brioche croutons.
