
Aloe vera with orange mousse and sesame cake

Preparation
- Finely chop the aloe vera (save the syrup).
- Bring the milk to a boil with the blood orange purée and aloe vera syrup.
- Dissolve the gelatin in it.
- Let cool until it is slightly thickened.
- Then mix in the Alpro creamy and the semi-whipped vanilla cream.
- Pipe into silicone molds, freeze, and thaw to serve.
- Mix everything together in the food processor.
- Strain the mixture, pour into a siphon. Insert two cream chargers.
- Dispense the mixture into cardboard cups (half full) and microwave for 45 seconds on full power.
- Heat the mandarin purée with the sugar until the sugar is dissolved.
- Add the gelespessa using an immersion blender.
- Freeze into thin discs using a silicone mold.
- Fill a cocoa cup with the aloe vera, mandarin pastille, and place the mousse on top.
- Decorate with a little black sesame cake.
