What is it: mix of xanthan type and maltodextrin. The advantage of gelespessa compared to xanthan is that it dissolves more easily and does not need to be weighed as precisely. Especially in busy service, it is an ideal product to quickly thicken a sauce or lightly bind a dressing into a nice emulsion for a plate. Soluble in both cold and warm.
Dosage: up to 1 gram per 1 liter/kilo.
