Amor Perfecto

A pillow of white chocolate with crispearls and on top a shiny parfait amour.The base of this dessert is the silicone mold 'Ti voglio bene', which consists of a cushion with a heart inside.

Ingredients

white chocolate mousse
crispearls strawberry
200gCocoa butter
white food coloring powder
200gWhite chocolate
Silicone mold Ti voglio bene

600mlParfait
150mlliqueur parfait amour

225gWater
450gFine sugar
450gGlucose syrup
300gCondensed milk
30gGelatine
450gWhite chocolate
red food coloring liquid

Preparation

  1. Whip the mousse in the food processor.
  2. Add the crispearls to the mousse and pipe this into the silicone mold.
  3. Freeze well to be able to unmold.
  4. Spray the frozen mousse with chocolate: blend the powdered coloring thoroughly into the melted cocoa butter with a hand blender, then mix with the white chocolate, strain well (with a hairnet), and use at about 40°C.

  1. Whip the parfait until airy and mix in the liqueur.
  2. Pipe into the heart molds and freeze thoroughly.

  1. Mix the water, sugar, and glucose and cook until the sugars are well dissolved.
  2. Add the condensed milk and gelatin.
  3. Pour this over the chocolate and mix well.
  4. Color with the food coloring.
  5. Gently warm the mixture and pour over the parfait hearts.
  6. Place the parfait in the chocolate mousse cushions.
