Apple galettes from the Big Green Egg

Fancy a sweet treat from your Big Green Egg? With these apple galettes, you can quickly serve a beautiful dessert.

Ingredients

4Slices of all-butter puff pastry

Preparation

  1. Mix the softened butter, almond paste, eggs, and flour in the stand mixer (with paddle attachment) or with an electric mixer until smooth.

  1. Roll out the sheets of puff pastry on a floured work surface into squares of about 12 cm.
  2. Cut out circles of Ø 12 cm with a cooking ring and prick them with a fork.
  3. Spread the pastry circles with a layer of frangipane. You will use about half

  1. Peel the apples, remove the cores, and slice the apples into thin slices using a mandoline.
  2. Arrange the slices overlapping and in circles on the frangipane.
  3. Lightly caramelize the butter in a small pan. Mix the sugar with the cinnamon.
  4. Brush the apple slices with the butter and sprinkle with cinnamon sugar.
  5. Tip: Want to freeze (some of) the galettes? Then only brush them with butter and add the cinnamon sugar just before baking.

  1. Preheat the Big Green Egg with the convEGGtor and grid to 220°C.
  2. Sprinkle the cold pizza stone with flour and place the apple galettes on it.
  3. Place the stone in the Egg, close the lid, and bake the galettes for about 25 minutes until golden brown and cooked through.
