Baba orange & thyme

Excitingly served with 'thyme smoke'.

Ingredients

1units.itemsSavarin Baba
scoop of vanilla ice cream
1units.itemsorange juice
250gSugar
0.5units.itemsVanilla pod
250mlWater
1units.itemsorange peel
100mlCointreau
cocktail smoker
Fresh thyme

Preparation

  1. Heat water with sugar and orange juice with the vanilla seeds and the scraped pod, until the sugar is dissolved.
  2. Cut the orange peel (without the white) into fine julienne and add.
  3. Then add the Cointreau.
  4. Soak the baba in the syrup until saturated.
  5. Spoon some of the syrup and orange peel into a glass.
  6. Place the baba on top.
  7. Place a scoop of vanilla ice cream (and optionally softly whipped cream) on the baba.
  8. Put some thyme in the smoker holder.
  9. Place it on the glass.
  10. Light the thyme and place the cover on top so the thyme smoke fills the glass.
