Preparation
- Heat water, sugar, and orange juice until the sugar has dissolved.
- Add the amaretto and orange zest.
- Soak the babas (1 baba per person) in the syrup until saturated.
- Heat the cream to 80°C.
- Pour into the silicone mold and let cool.
- Freeze to easily remove from the mold.
- Defrost before use and garnish with the nougatine crunch.
- Place the baba on a plate, place the crème brûlée on top of the baba.
- Drizzle with a little gelified rum and light it so the baba is flaming at the table.
