Red cabbage beignet

Perfect for the Christmas menu; these delicious red cabbage beignets.

Ingredients

Oil for frying
Tempura flour
Shrink wrap
Salt
prepared red cabbage

Preparation

  1. Prepare the red cabbage according to the basic recipe.
  2. Place a spoonful of red cabbage on a piece of cling film, roll into small balls, and freeze them.
  3. Mix tempura flour (in a blender) with cold water to a liquid batter (slightly thinner than yogurt) and season with salt.
  4. Dip the frozen red cabbage balls in the tempura batter and fry them in oil at 180°C.
