Beetroot prawn crackers with herring

The dish consists of beetroot prawn crackers with smoked beetroot mayonnaise.

Ingredients

Brick pastry
Beet juice

Cooked beets
Mayonnaise

herring
braised samphire

Preparation

  1. Tear the brick pastry into pieces and put it in a blender.
  2. Bring the beet juice to a boil and add it to the brick pastry while blending.
  3. Add just enough beet juice until a nice homogeneous batter forms.
  4. Using a stencil, spread the batter onto a silicone mat and dry in a dehydrator for about 2 hours.
  5. Fry in hot oil until crispy like prawn crackers.

  1. Briefly smoke the cooked beets in cold smoke and puree them into the mayonnaise.

  1. Top the prawn cracker with a strip of herring, the smoked beet mayonnaise, and some stewed samphire.
