
Beetroot prawn crackers with herring

Brick pastry
Beet juice
Cooked beets

Preparation
- Tear the brick pastry into pieces and put it in a blender.
- Bring the beet juice to a boil and add it to the brick pastry while blending.
- Add just enough beet juice until a nice homogeneous batter forms.
- Using a stencil, spread the batter onto a silicone mat and dry in a dehydrator for about 2 hours.
- Fry in hot oil until crispy like prawn crackers.
- Briefly smoke the cooked beets in cold smoke and puree them into the mayonnaise.
- Top the prawn cracker with a strip of herring, the smoked beet mayonnaise, and some stewed samphire.
