Blini with burrata and various pearls

A blini with a delicious burrata spread and various colorful pearls. A nice little dish for Valentine's Day.

Ingredients

Novello olive oil
Salt
Lime zest
Burrata
Pepper

12gAgar
1.5gXanthan
500gpomegranate juice

Olive oil pearls
Empty caviar tin
Pomegranate seeds
Tomato pearls

Shiso Cress
Blinis

Preparation

  1. Mash the burrata together with the Novello olive oil.
  2. Season with pepper, salt, and lime zest.

  1. First mix all the ingredients cold.
  2. Then bring the mixture to a boil and let it cool to a gel.
  3. Blend the gel and fill a piping bag.
  4. Set aside until use.

  1. Fill an empty caviar tin with the different pearls.
  2. Set aside until use.

  1. Top a blini with the burrata spread.
  2. Pipe some of the gel on top and garnish with the various pearls and some Shiso Cress.
