Blood orange clouds

The blood orange clouds are an enchanting addition with the intense flavor of blood orange for various culinary creations.

Ingredients

24gMineral water
180gBoiron blood orange purée
20gSugar
4ggelatin powder 220 bloom

Preparation

  1. Mix the gelatin with the water and let it soak for 15 minutes.
  2. Put the blood orange purée and sugar in a stand mixer or KitchenAid bowl.
  3. Mix to dissolve the sugar.
  4. Melt the gelatin in the microwave.
  5. Add the gelatin to the blood orange and mix.
  6. Place the bowl in the refrigerator at 4°C until the gelatin sets.
  7. Place the bowl in the stand mixer.
  8. Whip until it reaches the consistency of meringue.
  9. After 5-6 minutes, return the bowl to the refrigerator until the gelatin sets again.
  10. Whip again and repeat chilling and whipping until the mixture reaches maximum volume.
  11. Place in a frame or mold.
  12. Refrigerate and let it set.
  13. Cut with a pastry cutter or knife.
