Bonbon of ossenworst in a jelly of Amsterdam onion

Bonbon with a twist.

Ingredients

8gKappa
Amsterdam onions
500gOssenworst
80gMayonnaise
80gCrème fraîche
Chives

Preparation

  1. Mix 500 grams of ossenworst, 80 grams of mayonnaise, and 80 grams of crème fraîche in a food processor. Blend the mixture until smooth and finally mix in some finely chopped chives. Pipe into desired shapes and freeze.
  2. Juice large Amsterdam onions in a juicer. Tint the juice slightly with a drop of yellow food coloring. For 1 liter of juice, add 8 grams of kappa (plant-based gelling agent) and bring to a boil while stirring.
  3. Skewer the frozen ossenworst bonbons on a satay stick and dip them 1 or 2 times in the jelly. Let the bonbons thaw before serving.
