
Brioche bread with scrambled eggs, hot smoked salmon and a crispy egg topping

Preparation
- Beat the egg in a bowl and season with salt and pepper.
- Place the silicone bee mold on a baking tray and pour the egg into it.
- Level the mold with a palette knife.
- Bake it for 6 minutes until crispy at 160°C.
- Beat the egg in a bowl and season with salt and pepper.
- Break the hot smoked salmon into pieces.
- Melt a little butter in a pan over medium heat. Pour the egg into the pan, lower the heat, and stir constantly so it doesn't stick to the pan.
- Keep stirring so the egg sets evenly. Turn off the heat when the egg is half set.
- Stir the pieces of hot smoked salmon into the egg.
- Bake the brioche bread as described on the packaging.
- Top the bread with a little mesclun salad and place the scrambled eggs with smoked salmon on top.
- Finally, garnish the dish with the crispy egg.
