Burgers made from red beetroot

The airy horseradish mayonnaise forms a tasty combination with the sweet, earthy flavor of beetroot.Tip: these beet burgers are also delicious in a hamburger bun.

Ingredients

100gEgg white
Salt and pepper
200gYogurt
6sunflower or rapeseed oil
30gFresh horseradish

200gpre-cooked beets
1units.itemstray of white beech mushrooms
Salt and pepper
30gBeet juice
2units.itemsShallots
2tofu
100gblanched organic sorghum
14gGelburger

Preparation

  1. Briefly blend the egg white with the yogurt in a powerful blender.
  2. Peel the horseradish, cut into pieces, and add to the egg white with the yogurt.
  3. Let the blender run and add the oil drop by drop.
  4. Season the mayonnaise with salt and pepper.

  1. Cut the beets into a fine brunoise. Finely chop the shallots.
  2. Mix the beets, white beech mushrooms, chopped shallots, tofu, and sorghum with the beet juice in a bowl.
  3. Season with salt and pepper.
  4. Add the gelburger and stir well.
  5. Press the beet mixture into a ring mold and chill for at least 1 hour.
  6. Fry the beet burgers in a pan, and serve with horseradish mayonnaise and bread.
