Gelburguer is a mixture of alginate and calcium. Once mixed with a liquid, gelburguer will be converted into a binding mass, which is very suitable as an edible adhesive.
Base 10 to 15 grams per kilogram of mass.
Use: widely applicable, but works best in combination with moisture. It is therefore recommended to add moisture to the mass. Note: with ingredients that contain a lot of calcium, you will get too strong a reaction. Gelburguer is heat-resistant; the mass in which you use it can therefore be heated without losing its shape.
