Delicious coulis of smoked paprika.Ingredients
200groasted bell pepper
80gChardonnay vinegar
460gVegetable stock
clove
150grapeseed oil
10gSmoke oil
2Gelcrem Cold (Sosa)
1Pimentón (smoked paprika)
Preparation
- Rinse the bell pepper well and then blend with the vinegar, broth, garlic, and pimenton. Strain the mixture and finish with the rapeseed oil and smoked oil.
- Emulsify with the gelcrem using a hand blender.
