Smoked paprika coulis

Delicious coulis of smoked paprika.

Ingredients

200groasted bell pepper
80gChardonnay vinegar
460gVegetable stock
clove
150grapeseed oil
10gSmoke oil
2Gelcrem Cold (Sosa)
1Pimentón (smoked paprika)

Preparation

  1. Rinse the bell pepper well and then blend with the vinegar, broth, garlic, and pimenton. Strain the mixture and finish with the rapeseed oil and smoked oil.
  2. Emulsify with the gelcrem using a hand blender.
