Duck breast fillet with a crispy layer

Gives the duck breast just a bit more flavor and texture.

Ingredients

rice flour
Spices
duck breast fillet

Preparation

  1. Mix the rice flour with the spices.
  2. Score the fat of the duck breast fillet in a crosshatch pattern.
  3. Rub the rice flour well onto and into the fat.
  4. Heat a frying pan without any fat.
  5. Place the duck in the pan fat side down and put another pan on top to apply pressure to the fillet.
  6. Fry the fat side until crispy, turn the meat over, and cook to the desired doneness.
