Preparation
- Mix the rice flour with the spices.
- Score the fat of the duck breast fillet in a crosshatch pattern.
- Rub the rice flour well onto and into the fat.
- Heat a frying pan without any fat.
- Place the duck in the pan fat side down and put another pan on top to apply pressure to the fillet.
- Fry the fat side until crispy, turn the meat over, and cook to the desired doneness.
