Preparation

Slice the cheese as desired.
Spread a little apple syrup on the slices and stack them.
Wrap tightly in plastic wrap and press under weight.
Cut into squares to serve.

Use an apple corer to cut elongated round shapes from the mild cheddar.

Moisten the cheese slightly with water.
